  • 3.5 oz spinach, wilted and chopped Adds color and health benefits.
  • 2 tbsp cream cheese Enhances the filling's texture.

For Cooking and Dipping

  • 1 tbsp mint sauce Enhances the freshness of the mint.
  • 1 tbsp olive oil Used for stir-frying and adds depth.

Instructions

Preparation of Dough

  • In a mixing bowl, combine self-rising flour and Greek yogurt. Mix until the dough comes together and knead for about 5 minutes until smooth.
  • Cover the dough with a clean towel and let it rest for 30 minutes.

Preparation of Filling

  • In another bowl, mix together wilted spinach, crumbled feta cheese, cream cheese, minced garlic, chopped mint, and ground black pepper.
  • Stir well until all ingredients are combined and set aside.

Shaping and Cooking

  • Divide the rested dough into 4 equal-sized balls and flatten each ball into a round shape, about 1/4 inch thick.
  • Place a generous amount of spinach and feta filling in the center of each round, fold the dough over to create a half-moon shape, and pinch edges to seal.
  • Heat a dry non-stick pan over medium heat and cook each flatbread for about 3-5 minutes on each side until golden brown and crisp.
  • Prepare a dipping sauce by mixing olive oil and mint sauce in a small bowl.
  • Serve the cooked flatbreads warm with the dipping sauce on the side.

Notes

Resting the dough is crucial for gluten development. Use fresh produce for the best flavor, and feel free to experiment with additional fillings.
