Instructions

Preparation

  • Begin by draining the salmon from the cans and flaking it gently with a fork in a large mixing bowl, removing any skin or bones.
  • In a skillet, sauté the chopped spinach for about 2 minutes over medium heat until wilted. Let it cool slightly and squeeze out any excess moisture.
  • In the same bowl with the salmon, add the sautéed spinach, red onion, garlic, feta cheese, breadcrumbs, beaten eggs, parsley, dill (if using), lemon juice, lemon zest, oregano, salt, and pepper. Mix until everything is well combined.
  • Shape the mixture into patties about 3 inches wide, making 6 to 8 patties.

Cooking

  • Heat a drizzle of olive oil in a skillet over medium heat. Place the patties gently in the skillet and cook for about 3–4 minutes on each side until golden brown and crispy.
  • Remove from the skillet and let them rest on a paper towel to absorb excess oil.

Serving

  • Serve warm with tzatziki sauce and lemon wedges, alongside a salad or warm pita bread.

Notes

Consider adding smoked paprika or chili flakes for extra flavor. Wet your hands when forming patties to prevent sticking. Can be made ahead and refrigerated.
