For the sandwich

  • 4 slices bread (sourdough, whole grain, or rustic white) Provides a sturdy yet delightful base for the sandwich.
  • 2 tablespoons softened butter Ensures a golden crust.

Instructions

Preparation

  • Heat olive oil in a non-stick pan over medium heat. Add the spinach and sauté for 5-6 minutes until wilted. Sprinkle with sea salt and transfer to a plate.
  • Spread softened butter on one side of each slice of bread.

Cooking

  • Place two slices of bread, butter-side down, in the pan over medium heat.
  • Distribute chopped sun-dried tomatoes evenly on the bread. Layer half of the feta and cheddar over the tomatoes, followed by the sautéed spinach. Top with the remaining feta and cheddar, and sprinkle oregano and chili flakes.
  • Place the remaining bread slices on top of the filling, butter-side up. Cook for about 5 minutes until golden and crispy. Carefully flip and cook the other side for an additional 5 minutes until toasted and the cheese is melted.

Serving

  • Sprinkle with more oregano and chili flakes for garnish. Drizzle with honey if desired. Serve warm.

Notes

For an aromatic boost, consider adding minced garlic while sautéing spinach. You can use different cheeses such as mozzarella or provolone for varied texture and flavor. Extra veggies like roasted bell peppers or artichoke hearts add Mediterranean flair.
