For the Herb-Garlic Butter Candle

  • 100 g unsalted butter, softened Rich and silky, for the butter candle.
  • 1 clove garlic, minced Aromatic and pungent.
  • 1 tsp finely chopped fresh thyme or rosemary Introduces an earthy depth.
  • 1/4 tsp chili flakes Optional. Adds a spritz of heat.
  • pinch flaky salt Final touch of flavor.
  • 1 thick breadstick, wooden skewer, or edible rosemary sprig Used as the 'wick' for the candle.

To Serve

  • Warm crusty bread or focaccia Perfect for scooping up the creamy dip.

Instructions

Preparation of Ricotta

  • Place the ricotta cheese in a food processor or mixing bowl. Add cream or milk, olive oil, salt, pepper, and lemon zest. Whip until ultra-smooth and airy.
  • Spread the ricotta mixture into a shallow dish, creating space in the center for your candle.

Making the Herb-Garlic Butter

  • In a separate bowl, mix softened butter with minced garlic, thyme or rosemary, optional chili flakes, and flaky salt. Form into a short, thick cylinder and chill until firm.

Assembling the Butter Candle

  • Insert a thick breadstick or wooden skewer into the center of the butter candle.
  • Chill again until solid.

Final Assembly

  • Place the butter candle upright in the center of the ricotta dip. Light the wick (if using a skewer) and watch the herb-garlic butter melt into the ricotta.
  • Swirl the melted butter into the ricotta dip and serve immediately with warm bread or focaccia.

Notes

Ensure the ricotta is well whipped for a smooth texture. Chill the butter candle for optimal results. Taste before serving and adjust seasoning as needed.
