Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Arrange the zucchini slices on the baking sheet, giving them space to breathe, and lightly brush with olive oil.
  • Sprinkle each slice with garlic powder and Italian seasoning.
  • Bake the zucchini slices for 5 minutes until slightly softened.
  • Remove from the oven and spread a spoonful of pizza sauce over each zucchini slice.
  • Sprinkle with mozzarella and Parmesan cheese.
  • Add pepperoni slices or your chosen toppings.
  • Return to the oven and bake for an additional 5–7 minutes, or until the cheese is bubbly and golden brown.
  • Sprinkle with fresh basil or parsley before serving.

Notes

For extra crispiness, pat zucchini slices dry after slicing. Experiment with cheese blends and toppings. Store leftover pizzas in an airtight container for up to three days.
