Preparation

  • Gradually add the dry ingredients to the egg mixture, alternating with the milk, mixing until just combined.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 12-15 minutes or until the cake springs back when touched.
  • After baking, turn the cake onto a clean kitchen towel dusted with powdered sugar and carefully roll it up starting from a short side. Allow it to cool completely.

Making the Cookie Dough Filling

  • Beat the softened butter, granulated sugar, and brown sugar until creamy. Mix in the vanilla extract and milk until smooth.
  • Gradually add the flour, stirring in the mini chocolate chips and mini M&M's once combined.

Assembly

  • Once the cake has cooled, unroll it gently and spread the cookie dough evenly over the surface.
  • Spread softened vanilla ice cream over the cookie dough layer.
  • Re-roll the cake without the towel, ensuring fillings are tightly packed inside. Wrap in plastic wrap and freeze for at least 4 hours.
