Instructions

Make the Dough

  • In a large mixing bowl, combine all-purpose flour, salt, sugar, and instant yeast. Slowly add warm water and olive oil, mixing until shaggy.
  • Transfer the dough to a floured surface and knead for 8–10 minutes until smooth. Cover and let rise in a warm place until doubled in size (about 1 hour).

Prep the Camembert

  • Unwrap the Camembert cheese and place it back into its wooden box. Score the top rind in a crisscross pattern.

Shape the Wreath

  • After the dough has risen, punch it down and transfer it to a lightly floured surface. Divide into 12–14 equal balls.
  • On a parchment-lined baking tray, place the Camembert box in the center, arranging the dough balls around it in a ring shape.

Proof

  • Cover the tray with a kitchen cloth and let it rest for 20–30 minutes. Preheat the oven to 400°F (200°C).

Mix Garlic Butter

  • In a small bowl, mix melted butter, grated garlic, chopped rosemary, and a pinch of sea salt.

Brush and Drizzle

  • Brush the dough balls with the garlic butter mixture, ensuring each is well-coated. Drizzle with olive oil.

Bake

  • Bake for 25–30 minutes until golden brown and the Camembert is gooey and bubbly.

  • Remove from the oven, garnish with rosemary sprigs and brush with melted butter if desired.

Notes

For a healthier twist, use whole wheat flour or low-fat Camembert. You can also add herbs or roasted vegetables for extra flavor.
