Ingredients

For the onion rings

  • 2 large large white onions, sliced into thick rings
  • 1 block mozzarella cheese, cut into strips
  • 1 cup all-purpose flour
  • 2 large large eggs, beaten
  • 1.5 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • as needed Fresh parsley, chopped (for garnish)
  • as needed Vegetable oil, for frying

For the garlic butter

  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • a pinch pinch salt

Instructions

Preparation

  • Carefully separate the onion slices into rings, matching similar sizes.
  • Take a mozzarella strip and insert it between two onion rings, gently pressing down to create a sandwich.

Coating

  • Prepare three shallow bowls—one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, salt, and pepper.
  • Dip each onion ring sandwich in flour, then in egg, and finally press into the panko mixture until fully coated.

Chilling

  • Transfer the coated onion rings to a lined baking sheet and place in the freezer for about 30 minutes.

Frying

  • Heat vegetable oil in a deep skillet to 350°F (175°C).
  • Fry the onion rings in batches for 2–3 minutes on each side until golden brown and crispy.
  • Drain on a plate lined with paper towels.

Garlic Butter

  • Melt the unsalted butter in a small pan over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Brush the garlic butter over the hot onion rings while they’re warm.

Serving

  • Garnish the onion rings with fresh chopped parsley and serve immediately.

Notes

For a bit of spice, add cayenne pepper to the panko breadcrumbs. You can also freeze the coated onion rings for later use and fry them straight from the freezer.
