Instructions

Boil the Beef

  • Wash the beef thoroughly and place it in a pot with water, salt, and black pepper. Bring to a boil over medium heat, then reduce to a simmer and cook for about 20-25 minutes, or until tender.

Prepare the Stew

  • Blend the plum tomatoes, red bell pepper, habanero pepper, and half of the onion until smooth to create the sauce base.
  • Dice the remaining half of the onion. In a frying pan, heat olive oil over medium heat, then add the chopped onions and sauté until softened, about 3-4 minutes.

Combine and Cook

  • Stir in the blended tomato and pepper mixture along with the remaining black pepper. Boil on medium heat for about 5 minutes to develop flavors.
  • Add the cooked beef and beef stock, stirring to combine. Adjust with more broth for desired consistency.

Add the Seasonings

  • Add thyme, bouillon powder, and curry powder to the stew. Adjust salt to taste. Cover and let simmer on medium-low heat for about 10 minutes.

Serve

  • Serve Nigerian Beef Stew hot, alongside rice, plantains, or crusty bread.

Notes

For an even richer flavor, consider marinating the beef in some spices for a few hours or overnight before cooking. You can also add carrots or peas for extra nutrition.
