Ingredients

Cheesecake Filling

Base

Instructions

Make the Compote

  • In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Stir gently, allowing the berries to soften and turn syrupy—about 5–7 minutes. For a thicker texture, add the cornstarch mixture and simmer for an additional 1–2 minutes. Let it cool completely.

Whip the Cream

  • In a bowl, blend the mascarpone, burrata, yogurt, powdered sugar, vanilla extract, and optional lemon zest. Mix slowly to maintain lightness and chill until ready to assemble.

Prepare the Base

  • Combine the crushed cookies with melted butter in a bowl until reaching a sandy, clumpy consistency.

Layer the Glasses

  • Start with 2 tablespoons of the cookie crumb mixture at the bottom of each glass, followed by 2-3 tablespoons of the creamy burrata blend, and a generous layer of the berry compote. Repeat for taller glasses.

Garnish and Chill

  • Top each cheesecake cup with additional berries and a mint leaf. Chill for at least 1 hour before serving to set the flavors.
