Instructions

Preparation

  • Line a 9x9-inch baking dish with parchment paper, leaving an overhang for easy removal once the cheesecake is set.
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  • Press this mixture evenly into the bottom of the prepared baking dish. Chill in the refrigerator while you prepare the cheesecake filling.

Filling Preparation

  • In a separate mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the powdered sugar and peppermint extract, along with the green food coloring if desired, until everything is blended.

Chocolate Mixture

  • In another bowl, melt the chocolate chips with the heavy cream using the microwave in 30-second intervals, stirring in between, until smooth. Allow it to cool slightly.
