Ingredients

Instructions

Make the Crust

  • Combine the crushed biscuits with melted butter and 1 tablespoon of honey in a bowl. Mix well until the crumbs resemble wet sand. Transfer to a parchment-lined 20x20 cm pan and press down. Chill in the refrigerator.

Mix the Ricotta Layer

  • In a mixing bowl, combine ricotta, cream cheese, 60 ml honey, vanilla extract, and lemon zest. Beat until smooth and fluffy. Spread this mixture evenly over the chilled crust.

Prepare the Topping

  • In a small bowl, mix chopped pistachios with brown sugar, melted butter, and honey. Stir in optional dried cranberries or dates if using. The mixture should be sticky.

Top and Chill

  • Sprinkle the nut mixture over the ricotta layer and press down lightly. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Slice and Serve

  • Remove from refrigerator and slice into bars using a hot knife. Serve cold for best flavor and texture.

Notes

For extra crunch, lightly toast the pistachios. Customize toppings with different nuts or spices for a unique flavor. Store in an airtight container in the fridge or freeze for longer storage.
