Instructions

Preparation

  • In a mixing bowl, combine rolled oats, vanilla protein powder, dried blueberries, lemon zest, chia seeds, and shredded coconut. Sprinkle in cinnamon, if using.
  • Pour in almond butter and honey, mixing well.
  • Stir all ingredients until fully combined. The mixture should be sticky.

Forming the Bites

  • Scoop out tablespoon-sized portions of the mixture and roll them into bite-sized balls.
  • Place the balls on a plate and chill in the fridge for about 10 minutes.
  • Transfer chilled protein bites to an airtight container for storage.

Notes

For a nut-free option, use sunflower seed butter and omit shredded coconut. Adjust sweetness to taste and consider chilling longer for firmer bites.
