Instructions

Preparation of Crust

  • In a food processor, blend the golden Oreo crumbs until fine. Add the melted butter, salt, and red gel food coloring, pulsing until combined.
  • Lightly spray a 9-inch springform pan with non-stick spray. Press the crust mixture into the bottom and up the sides of the pan. freeze to set.

Prepare Filling

  • In a separate bowl, dissolve the blue raspberry Jell-O powder in 1 cup of boiling water. Stir until fully dissolved and set aside to cool.
  • In a mixing bowl, whip the heavy cream, 1 cup of powdered sugar, and 1 teaspoon vanilla extract until soft peaks form.
  • In another bowl, beat softened cream cheese, 1 cup of powdered sugar, and 1 teaspoon vanilla extract until smooth.
  • Gently fold half of the whipped cream into the cream cheese mixture.
  • Mix the cooled Jell-O with the remaining whipped cream until combined.

Assembly and Chilling

  • Spread the cream cheese mixture over the crust. Follow with the blue Jell-O mixture.
  • Cover the springform pan and refrigerate for at least 5 hours or overnight.

Frosting and Garnishing

  • Beat softened cream cheese and softened butter until fluffy. Gradually mix in the remaining powdered sugar until smooth.
  • Pipe the frosting around the edges of the chilled cheesecake.
  • Garnish with fresh blueberries and halved strawberries.

Notes

Chilling the cheesecake overnight yields the best texture. You can experiment with different flavors of Jell-O for variations. If desired, add chopped nuts on top for extra texture.
