Instructions

Preparation

  • In a mixing bowl, combine the graham cracker crumbs with the melted butter. Mix until the crumbs are fully coated.
  • Press this mixture firmly into the bottom of a 9×13 inch dish to form a solid base.
  • In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture evenly over the crust.
  • Layer the drained crushed pineapple evenly over the cream cheese layer.
  • Spread the thawed whipped topping over the pineapple layer, covering it completely.
  • Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Serving

Notes

Consider adding toasted coconut on top for extra flavor. You can also use fresh pineapple chunks instead of canned for a fresher taste. To lighten, use low-fat cream cheese and sugar substitutes.
