Ingredients

Instructions

Preparation of Crust

  • In a mixing bowl, combine the crushed vanilla wafer cookies with the melted butter. Stir until well combined. Press the mixture firmly into the bottom of a 9x13-inch dish. Chill in the refrigerator for about 20 minutes to help the crust set.

Making the Cream Cheese Mixture

  • In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. This should take about 2 to 3 minutes.
  • Gently fold in half of the whipped cream into the cream cheese mixture, being careful not to deflate it.
  • Split the cream cheese mixture into two equal bowls. In one bowl, fold in the strawberry puree and gelatin powder (if using) until the mixture is combined and well blended.

Layering the Cake

  • Start with the plain cream cheese layer and spread it evenly over the chilled crust. Scatter the diced fresh strawberries evenly across this layer.
  • Next, add the strawberry-flavored layer on top, smoothing it out with a spatula to create an even finish.

Final Chilling and Serving

  • Cover the dish and chill in the refrigerator for at least 4 hours, or until the cake has set.
  • Just before serving, top the cake with fresh strawberry slices, dollops of whipped cream, and a sprinkle of crushed vanilla wafers for extra crunch. Slice and enjoy!

Notes

Make ahead of time and store in the refrigerator for up to 5 days. Can also freeze for up to three months. Experiment with different fruits for added flavor.
