Instructions

Cook the Chicken Sausage

  • Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and sauté for about 5-7 minutes until browned.
  • Remove the sausage from the skillet and set it aside.

Sauté Onion and Garlic

  • In the same skillet, add the chopped onion and minced garlic, sautéing for about 2-3 minutes until the onion becomes translucent.

Toast the Orzo

  • Stir in the orzo pasta and let it cook for about 2 minutes. Pour in the chicken broth and bring to a boil.
  • Reduce the heat and simmer for about 10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.

Add Cream and Spinach

  • Stir in the heavy cream, chopped spinach, and cooked sausage. Cook for 2-3 minutes until the spinach wilts.

Incorporate Parmesan and Season

  • Remove from heat, stir in the grated Parmesan cheese, and season with salt and pepper. Garnish with fresh parsley before serving.

Notes

Elevate the dish with red pepper flakes, swap greens or experiment with different cheeses. It can be made ahead and reheated.
