Ingredients

Crust Ingredients

Apple Filling Ingredients

  • 5 large tart apples, peeled and thinly sliced Provide tartness and sweetness.
  • 0.33 cups granulated sugar Sweetens the apples.
  • 1 tsp ground cinnamon Adds warmth to the filling.
  • 1 tbsp lemon juice Brightens apple flavor.
  • 1 tbsp cornstarch (optional) Helps thicken the filling.

Instructions

Make the Crust

  • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • Cut the cold butter into the flour mixture until it resembles coarse crumbs.
  • Add the egg yolks, sour cream, and vanilla extract, and mix until dough forms.
  • Divide the dough in half, shape each half into discs, and refrigerate for 30 minutes.

Prepare the Apple Filling

  • In a large bowl, toss the sliced apples with sugar, ground cinnamon, lemon juice, and cornstarch.
  • Let the apple mixture sit while you assemble the cake.

Assemble the Cake

  • Preheat the oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  • Press one chilled dough disc evenly into the bottom of the prepared dish.
  • Spread the apple mixture over the crust, then crumble the second dough disc over the top of the apples.

Bake and Finish

  • Bake the Szarlotka for 45–50 minutes or until golden brown.
  • Cool completely on a wire rack and dust with powdered sugar before serving.

Notes

For added flavor, mix different apple varieties. Serve with vanilla ice cream or whipped cream for an indulgent treat.
