Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  • In another bowl, whisk together the vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, and white vinegar until smooth.
  • Gradually pour the wet mixture into the dry ingredients, mixing gently until the batter is velvety and smooth.
  • Stir in the brewed coffee to the batter.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Allow the cakes to cool in pans for about 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • Beat together the cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract, mixing until you achieve a creamy frosting.

Assembly
