Ingredients

For the Cake

  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 0.5 cups cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 0.5 cups vegetable oil
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For the Oreo Filling

  • 1 cup crushed Oreo cookies
  • 8 oz cream cheese, softened
  • 0.25 cups powdered sugar

For the Frosting

  • 4 oz cream cheese, softened
  • 0.5 cups butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 15x10-inch jelly roll pan by lining it with parchment paper and lightly greasing it.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, eggs, vegetable oil, red food coloring, vanilla extract, and white vinegar.
  • Gradually add the wet mixture to the dry ingredients, stirring until the batter is smooth.

Baking

  • Pour the batter into the lined jelly roll pan, spreading it evenly. Bake for approximately 12-15 minutes, or until a toothpick comes out clean.
  • While the cake is still warm, carefully roll it up with the parchment paper from one short end to the other. Let it cool completely on a wire rack.

Filling and Frosting

  • In a bowl, beat together the crushed Oreo cookies, softened cream cheese, and powdered sugar until smooth.
  • Once the cake has cooled, gently unroll it and spread the Oreo filling evenly over the surface. Roll the cake back up without the parchment paper.
  • To make the frosting, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract.
  • Frost the outside of the cake roll generously with the cream cheese frosting, and garnish with additional crushed Oreo cookies.

Notes

Chill your mixing bowls and beaters before starting to create a smoother texture. Use a clean kitchen towel to assist with rolling the cake.
