Instructions

Preparation

  • Wash the rhubarb stalks thoroughly. Chop them into small pieces (approximately 1-inch sizes) and set them aside. Core and chop the apple into similar-sized pieces.

Blending the Base

  • In a blender or food processor, combine the chopped rhubarb and apple. Puree until the mixture is smooth and well-combined.

Heating

  • Pour the pureed mixture into a medium saucepan. Add in the honey, vanilla extract, and desired amount of cinnamon. Stir well to mix all the ingredients together.

Cooking Process

  • Place the saucepan over medium heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, stirring often to prevent sticking.

Simmering

  • Let the mixture simmer for about 15 to 20 minutes, stirring occasionally to monitor the consistency.

Cooling and Storing

  • Once thickened, remove the saucepan from the heat. Spoon the warm rhubarb butter into a clean jar or container. Allow it to cool at room temperature, then refrigerate to set fully.
