Ingredients

For the crust

  • 2 tablespoons sugar
  • 1/2 cup cold butter, cut into cubes
  • 1 cup all-purpose flour

For the custard filling

  • 1 cup chopped rhubarb
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup sugar
  • powdered sugar for dusting

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup of flour, cold butter, and 2 tablespoons of sugar. Mix until crumbly.
  • Press the crumbly mixture evenly into a greased 8x8-inch baking pan.
  • Bake for 12-15 minutes or until the crust is lightly golden.

Custard Filling

  • In another bowl, beat together the eggs, 1 cup of sugar, 1/4 cup of flour, and salt until smooth.
  • Stir in the chopped rhubarb until well mixed.
  • Pour the custard mixture over the hot crust and spread evenly.
  • Bake for 35-40 minutes, or until the custard is set and golden.

Finishing

  • Allow the bars to cool completely before slicing into squares.
  • Dust with powdered sugar before serving.

Notes

Consider adding a touch of vanilla extract or a sprinkle of cinnamon to the custard mix. Use a sharp knife to cut the bars for cleaner edges.
