Preparation

  • In a small pot, mix the chopped rhubarb, grated ginger, sugar, and water. Stir gently to combine.
  • Place the pot over medium heat and let it simmer for about 10 minutes or until the rhubarb becomes soft and breaks down.
  • Strain the mixture using a fine sieve, pressing the solids gently to extract all the syrup. Allow the syrup to cool down in the refrigerator.
  • In a tall glass, fill it halfway with ice. Pour in the chilled rhubarb syrup, filling about a third of the glass.
  • Top off the glass with sparkling water or tonic, stirring gently to combine.
  • Garnish with a squeeze of lime and a few fresh mint leaves.

Notes

To intensify the rhubarb flavor, consider adding a splash of apple juice. For variations, reduce sugar and use honey or experiment with different herbs like basil or rosemary.
