Ingredients

Instructions

Preparation

  • Add the chopped rhubarb, freshly grated ginger, sugar, and water to a small pot over medium heat and stir gently to help dissolve the sugar.
  • Bring the mixture to a simmer and cook, stirring occasionally, until the rhubarb becomes soft and tender, about 10 minutes.
  • Remove the pot from heat and strain the mixture into a bowl or jar, discarding the solids and capturing the vibrant syrup.
  • Chill the syrup in the refrigerator for about 30 minutes or until ready to serve.

Serving

  • Pour a few tablespoons of the chilled rhubarb syrup into a glass filled with ice.
  • Top with sparkling water or tonic, gently stirring to combine the flavors.
  • Garnish with fresh mint leaves and a squeeze of lime.

Notes

This syrup can also serve as a base for other drinks, both alcoholic and non-alcoholic, allowing for variations. Store the syrup in an airtight container in the refrigerator for up to two weeks. For more flavor, consider adding fresh berries or citrus fruits.
