Instructions

Preparation

  • Wrap the beets in foil and preheat your oven to 400°F (200°C). Roast for 45-50 minutes until fork-tender.
  • Let the beets cool for a few minutes, then peel and slice them into 1/2-inch thick rounds.

Cooking

  • Heat olive oil in a pan over medium heat. Add sliced pear and drizzle with honey. Sauté for about 2 minutes per side until lightly golden.

Assembly

  • On a plate, layer a beet slice, followed by blue cheese, then caramelized pear. Repeat until your tower reaches desired height.
  • Finish with a sprinkle of blue cheese, toasted pecans, and fresh thyme. Drizzle with balsamic glaze and serve.
