  • 3 medium medium beets, roasted and sliced into thick rounds
  • 1 large pear, thinly sliced
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup pecans, toasted and chopped
  • 1 tablespoon honey can be substituted with maple syrup for vegan option
  • 1 tablespoon balsamic glaze can be swapped with citrus vinaigrette
  • 1 tablespoon olive oil
  • to taste fresh thyme sprigs, for garnish

Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Wrap the whole beets in foil, ensuring they are well sealed.
  • Roast the beets for about 45–50 minutes, or until tender when pierced with a fork.
  • Allow the beets to cool, then peel and slice into thick 1/2-inch rounds.

Sautéing the Pears

  • Heat the olive oil in a skillet over medium heat.
  • Add pear slices and drizzle with honey. Sauté for roughly 2 minutes on each side until golden.

Assembling the Towers

  • Start with a slice of beet, top with crumbled blue cheese, then a pear slice. Repeat the layers until stacked.
  • Finish with a sprinkle of blue cheese on top, and top with chopped pecans and fresh thyme before drizzling with balsamic glaze.
  • Serve immediately to enjoy the freshness.

Notes

For variations, try different cheeses such as goat cheese or feta, and add chili flakes for a spicy kick. Prepare components in advance and layer just before serving.
