Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Wrap the medium beets individually in aluminum foil and place them on a baking sheet. Roast for about 45–50 minutes, or until fork-tender. Let cool before peeling and slicing into ½-inch rounds.

Caramelizing the Pears

  • In a skillet, heat the olive oil over medium heat. Thinly slice the large pear and add the slices to the pan. Drizzle with honey and cook for about two minutes on each side until golden brown and caramelized.

Building the Towers

  • On a serving plate, place a slice of roasted beet as the base. Add a layer of blue cheese, then a slice of caramelized pear. Repeat layering and finish with a dollop of blue cheese on top.

Garnishing

  • Sprinkle the towers with chopped toasted pecans and fresh thyme. Drizzle with balsamic glaze just before serving.

Notes

For varied colors and flavors, select heirloom beets. Experiment with fresh herbs or substitute goat cheese if desired.
