Ingredients

Cheese Mixture

Beets

  • 2 small roasted beets, peeled and finely diced Earthy and vibrant, provides color and sweetness.

Optional Additions

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap beets in foil and place them on the oven rack.
  • Roast for 45–60 minutes until tender.
  • Cool roasted beets, then peel and finely dice.

Mixing the Cheese

  • In a mixing bowl, combine goat cheese, chives, dill, garlic powder, salt, pepper, and lemon juice.

Assembling the Log

  • Lay plastic wrap on a surface.
  • Spread the cheese mixture into a rectangle.
  • Sprinkle diced beets and add walnuts or cranberries if using.
  • Roll the cheese and beets into a log using the wrap.
  • Chill in the fridge for at least 1 hour.
  • Slice and serve with crackers, bread, or veggie sticks.

Notes

Roasting beets can be done ahead of time. For a smoother texture, let goat cheese sit at room temperature before mixing. Chill longer for better flavor melding.
