Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Toss the beets in olive oil, wrap them in foil, and place on a baking sheet. Roast for 45-60 minutes until tender.
  • Allow the roasted beets to cool, then peel and grate them.
  • In a mixing bowl, combine the softened goat cheese, grated beets, honey, garlic powder, and black pepper. Mix until smooth and creamy.
  • Lay plastic wrap onto your counter, spoon the beet and cheese mixture onto it and shape it into a log. Roll tightly, ensuring no air pockets.
  • Refrigerate the log for at least one hour to firm up.

Finishing Touches

  • Mix chopped pistachios and fresh parsley in a shallow dish. Unwrap and roll the log in this mixture until fully coated.
  • Slice the log into rounds and serve it on a platter with crackers, crostini, or veggie sticks.

Notes

Choose quality beets for the best flavor. Feel free to experiment with different nuts or herbs in the coating. The log can be prepared up to two days in advance.
