Instructions

Preparation

  • Preheat your oven to 450°F (230°C). Place the whole bell peppers on a baking sheet and roast them for about 25-30 minutes, turning occasionally for even charring.
  • Once they’re cool enough to handle, peel off the skin, remove the seeds, and set aside.

Blending

  • In a food processor, combine the roasted red peppers, crumbled feta cheese, Greek yogurt (or sour cream), minced garlic, lemon juice, olive oil, oregano, red pepper flakes, and black pepper.
  • Blend until you achieve a smooth and creamy consistency.

Finishing Touches

  • Once blended, taste your creation and adjust any seasoning if needed.
  • Transfer the dip into a serving bowl; drizzle with extra olive oil for richness and a touch of honey to balance flavors, if desired.
