  • 1 14 oz can fire-roasted red bell peppers Provides a smoky flavor.
  • 1 tablespoon Worcestershire sauce Enhances umami flavor.
  • 1 6 oz can tomato paste Adds richness to the stew.
  • 2 tablespoons canola oil For browning the beef.
  • 1 10 oz can cream of mushroom soup Creates a creamy texture.
  • 4 cups beef broth Base of the stew.

Instructions

Preparation

  • Toss the beef cubes in flour until fully coated.
  • Heat 1 tablespoon of oil in a Dutch oven over medium heat.
  • Sear the beef in batches until browned on all sides. Set aside.

Cooking

  • In the same pot, add the diced shallot and cook for 2–3 minutes until translucent.
  • Stir in the minced garlic and cook for another minute.
  • Add the fire-roasted red bell peppers, tomato paste, beef broth, Worcestershire sauce, and the browned beef into the pot. Stir to combine and bring to a boil.
  • Reduce heat to low, cover, and let it simmer for 1 hour.
  • After an hour, incorporate the cream of mushroom soup and simmer uncovered for an additional 30 minutes.

Notes

For added flavor, consider adding fresh herbs like thyme or rosemary towards the end. Searing the beef properly will enhance the flavors deeply.
