Ingredients

  • 2 pieces ripe yellow peaches, halved and pitted Juicy sweetness enhances when grilled.

Instructions

Preparation

  • Preheat your grill pan over medium-high heat.
  • Lightly brush the cut sides of the peach halves with a little extra virgin olive oil.

Grilling

  • Place the peach halves cut-side down on the grill pan and grill for about 2-3 minutes until caramelized.
  • Set them aside to cool slightly after grilling.

Assembly

  • Let the burrata sit at room temperature for 10-15 minutes.
  • On each plate, place one or two grilled peach halves with a burrata ball next to or atop the peaches.
  • Drizzle with remaining olive oil, scatter fresh basil leaves, and finish with a pinch of sea salt.

Serving

  • Serve immediately to preserve the wonderful textures of grilled peaches and creamy burrata.

Notes

For optimal taste, serve fresh. If leftovers occur, store peaches and burrata separately in the refrigerator for up to two days. You can also substitute burrata with ricotta for a lighter option.
