Instructions

Preparation

  • Preheat the oven to 150°C (300°F). Ensure your oven is preheated, as even temperatures are key to a perfectly baked custard.
  • In a mixing bowl, combine the goat cheese and heavy cream. Using a hand mixer or a whisk, blend until the mixture is smooth and creamy, with no lumps remaining.
  • Pour the mixture into ramekins, filling them about three-quarters full.

Baking

  • Place the ramekins in a baking dish and fill the dish with hot water to create a water bath.
  • Bake for about 30-35 minutes, or until the custard is set but still slightly wobbly in the center.

Cooling and Serving

  • Let it cool before refrigerating for at least 2 hours.
  • Before serving, top with a spoonful of fig chili jam.
  • For a spicy touch, you can add a black pepper caramel topping. Sprinkle a few grinds of black pepper over the jam if desired.
