Ingredients

Burger Mixture

Instructions

Preparation

  • Sauté the vegetables in a skillet over medium heat with 1 tablespoon of olive oil until soft, about 5 minutes.
  • Set the sautéed mixture aside to cool slightly.
  • In a large bowl, slightly mash the cooked lentils, then stir in the sautéed vegetables, chopped parsley, egg (or flax egg), Parmesan (or nutritional yeast), breadcrumbs, and spices. Mix until well combined.
  • Divide the mixture into equal portions and form into patties about ½ inch thick.

Cooking

  • Heat the remaining tablespoon of olive oil in the skillet over medium heat.
  • Carefully add the burger patties and cook for approximately 4 to 5 minutes on each side until crispy and golden brown.

Serving

  • Serve burgers on toasted whole grain buns with optional toppings like avocado, sautéed mushrooms, and fresh lettuce.

Notes

For best texture, chill mixture for 30 minutes before forming patties. Experiment with seasonings to customize flavor.
