Instructions

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute, until fragrant.
  • Add the ground turkey, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes.
  • Stir in the diced zucchini, chickpeas, cumin, smoked paprika, salt, and black pepper. Mix well and cook for another 5-7 minutes, until the zucchini is tender.
  • Remove from heat and sprinkle with fresh parsley. Serve warm.

Notes
