Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it into small pieces. Drain excess grease if necessary.
  • Add diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  • Pour in beef broth and add Worcestershire sauce, thyme, salt, and black pepper. Stir and bring to a boil.
  • Reduce heat and let the soup simmer for about 20-25 minutes.
  • Add frozen peas and cook for an additional 5 minutes.
  • Serve by ladling soup into bowls and topping with creamy mashed potatoes and chopped parsley.
