Ingredients

Burger Patties

  • 1 lb ground beef (80/20) Rich and succulent blend for juicy burgers.
  • 1 tsp salt Enhances the flavors.
  • 1/2 tsp black pepper Adds a dash of heat.
  • 1/2 tsp garlic powder Adds aromatic depth.
  • 1/2 tsp smoked paprika Infuses a smoky warmth.

For the Quesadilla

  • 4 large flour tortillas Soft and pliable for wrapping.
  • 2 cups shredded cheddar or American cheese Creamy, gooey goodness.
  • 1 small onion, finely chopped Caramelized for sweetness.
  • 1 tbsp butter or oil For caramelizing onions.

Burger Sauce

  • 1/2 cup mayonnaise Base for the burger sauce.
  • 1 tbsp ketchup Adds tangy sweetness.
  • 1 tbsp mustard Adds sharp flair.
  • 1 tsp pickle juice Adds a hint of brininess.
  • 1/2 tsp smoked paprika Enhances the flavor.
  • 1/2 tsp garlic powder Tantalizing garlic notes.

Instructions

Preparation

  • Divide the ground beef into four equal parts and roll into loose balls.
  • Preheat a cast-iron pan over high heat until hot.
  • Place the beef balls into the pan and smash them flat with a spatula or burger press.
  • Sear for about 2–3 minutes on each side, seasoning with salt, pepper, garlic powder, and smoked paprika.

Caramelizing Onions

  • In the same pan, melt butter over medium heat.
  • Add chopped onions and stir occasionally for 8–10 minutes until caramelized.

Assembly

  • Crank the heat on a clean pan to medium and lay one tortilla on it.
  • Sprinkle 1/2 cup of shredded cheese over the tortilla.
  • Place a smash burger patty on top, followed by caramelized onions and a drizzle of burger sauce.
  • Top with another handful of cheese and place another tortilla on top.

Crisping

  • Cook the quesadilla for 2–3 minutes on each side, pressing lightly to ensure crispness.
  • Flip carefully to keep the cheese inside melting and crust intact.

Serving

  • Remove the quesadilla from the pan and cut it into quarters.
  • Serve warm with extra burger sauce for dipping.

Notes

For variations, use lean turkey or plant-based meat, and try whole wheat tortillas. Serve with guacamole or corn salsa for added excitement.
