Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, add sliced smoked sausage, halved baby potatoes, and chopped onion.
  • Pour the olive oil over the mixture. Then, sprinkle in garlic powder, smoked paprika, salt, and pepper.
  • Toss everything together to coat evenly with oil and spices.
  • Transfer the mixture into a greased or foil-lined baking dish, spreading it into an even layer.
  • Bake in the preheated oven for 35–40 minutes, stirring halfway through.
  • Check for doneness: the potatoes should be tender and golden, and the sausage browned.
