Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the creamed mixture, alternating with the drained crushed pineapple.
  • Fold in the chopped pecans.

Baking
