Instructions

Preparation

  • In a medium bowl, combine olive oil, taco seasoning, cumin, garlic powder, and salt to create a flavorful marinade. Coat the chicken breasts in this mixture, cover, and let marinate for 15 minutes.

Cooking

  • Heat a skillet over medium-high heat, then add the marinated chicken. Cook for 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F. Let the chicken rest for 5 minutes before slicing it into bite-sized pieces.

Making the Dressing

  • Blend Greek yogurt, olive oil, lime juice, honey, cilantro, garlic, and cumin in a blender or food processor until smooth. Season with salt and pepper to taste.

Assembling the Salad

  • In a large bowl, toss together the chopped romaine and optional arugula. Layer with black beans, corn, diced bell pepper, sliced red onion, and halved cherry tomatoes.
  • Arrange the sliced chicken on top, garnishing with diced avocado, freshly chopped cilantro, and crumbled cotija or feta cheese.
