Ingredients

For the Phyllo Cups

Instructions

Preparation of Phyllo Cups

  • Preheat your oven to 375°F (190°C). Brush each phyllo sheet with melted butter and layer them four sheets thick.
  • Cut the stacked sheets into 3-inch squares and gently press each square into a mini muffin tin to form little cups.
  • Bake for 8-10 minutes or until golden and crisp. Allow to cool completely before filling.

Preparation of Avocado Filling

  • In a mixing bowl, mash the ripe avocados using a fork or potato masher.
  • Add lime juice, minced garlic, chopped cilantro, salt, and pepper. Mix until creamy and adjust seasoning as desired.

Cooking the Shrimp

  • Toss the peeled and deveined shrimp with smoked paprika, cayenne pepper, olive oil, salt, and pepper to coat.
  • Heat a skillet over medium-high heat and add the shrimp. Cook for 2-3 minutes per side until pink and slightly charred.

Assembly

  • Spoon a generous dollop of creamy avocado mixture into each phyllo cup.
  • Top with one spicy shrimp on each cup. Garnish with fresh cilantro leaves and a small lime wedge.

Notes
