Instructions

Prepare the Steak

  • Season the steak with salt, pepper, and any optional spices. Grill or sear in a hot skillet for about 4–5 minutes on each side until cooked to your desired doneness. Let it rest for a few minutes, then slice thinly against the grain.

Roast the Corn

  • Grill or pan-roast the corn until charred, taking about 8-10 minutes. Allow to cool before cutting kernels off the cob.

Make the Cilantro Cream Sauce

  • In a blender or food processor, combine cilantro, sour cream or Greek yogurt, lime juice, garlic, olive oil, and salt. Blend until smooth, adding a splash of water to thin if necessary.

Assemble the Bowls

  • For each bowl, start with a base of cooked rice. Layer on sliced steak, avocado, roasted corn, and add pickled onions and jalapeños if desired. Drizzle with cilantro cream and finish with a squeeze of fresh lime.
