Instructions

Make the Strawberry Swirl

  • Combine chopped strawberries, granulated sugar, and lemon juice in a medium saucepan.
  • Cook over medium heat for about 10 minutes until they soften.
  • Gently mash the strawberries and let cool before refrigerating.

Prepare the Ice Cream Base

  • Combine heavy cream, whole milk, and 1/2 cup of sugar in another saucepan over low heat.
  • Once the mixture begins to steam, add the seeds and pod from the vanilla bean.
  • In a separate bowl, whisk egg yolks with the remaining sugar until lightened in color.
  • Slowly drizzle the warm milk mixture into the yolks while whisking to temper the eggs.
  • Pour the tempered mixture back into the saucepan and cook until thick enough to coat the back of a spoon.
  • Strain through a fine mesh sieve to remove the vanilla pod and any cooked egg bits. Chill the mixture for at least 4 hours.

Churn the Ice Cream

  • Pour the chilled base into a pre-frozen ice cream maker and churn according to the manufacturer's instructions.
  • During the last 5 minutes of churning, fold in the strawberry swirl for a marbled effect.

Freeze & Serve

  • Transfer the ice cream to a container and freeze for at least 4 hours until firm.
  • Serve and enjoy the delightful explosion of creamy, fruity goodness.
