Ingredients

For the Taco Cups

  • 12 pieces small flour or corn tortillas Or wonton wrappers.
  • 1 tablespoon olive oil Used for sautéing the meat.
  • 1 pound ground beef or ground turkey The main protein component.
  • 1 packet taco seasoning Blend of spices for flavor.
  • 1/2 cup tomato sauce or salsa Adds moisture and flavor.
  • 1/4 cup water To adjust filling consistency.
  • 1 cup shredded cheddar cheese Adds richness.
  • 1 cup sour cream Optional topping.
  • 1/4 cup red onion, finely diced For crunch.
  • 1/4 cup tomato, diced For freshness.
  • 1/4 cup green bell pepper, diced Adds sweetness and color.
  • Fresh cilantro Optional garnish for flavor.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Warm the tortillas briefly to make them pliable, then cut them into circles and press them into each muffin cup of your greased muffin tin.

Cooking

  • Heat olive oil in a skillet over medium heat, add ground meat, and cook until browned. Drain excess fat.
  • Add taco seasoning, tomato sauce, and water to the meat, and simmer for 3-4 minutes until thickened.
  • Spoon the meat mixture into the tortilla cups and top with shredded cheddar cheese.
  • Bake in the oven for 10-12 minutes until cheese is melted and tortillas are golden brown.

Serving

  • Allow to cool slightly and top with sour cream, diced onions, tomatoes, bell pepper, and cilantro if desired.

Notes

For a twist, use corn tortillas for authenticity. Add jalapeños for heat or switch meat for beans or chicken. Make in advance by preparing filling and assembling when ready to bake.
