Instructions

Mixing and Kneading the Dough

  • In a large mixing bowl, combine all-purpose flour, instant yeast, sugar, and salt.
  • Slowly add warm water and olive oil while mixing until it forms a dough.
  • Knead the mixture by hand for about 8–10 minutes until smooth and elastic.
  • Cover the bowl with a damp cloth and set aside to rise until doubled, about one hour.

Preparing for Baking

  • Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
  • Place the Camembert wheel in the center of the lined tray.
  • Gently punch down the risen dough, and divide it into 16–20 small balls, arranging them around the cheese.

Resting the Dough

  • Cover the formed wreath with a dish towel and let it rest for 20–30 minutes.

Infusing Flavor

  • Score the top of the Camembert and insert garlic slices and rosemary.
  • Brush the dough with olive oil and sprinkle with flaky sea salt and additional herbs.

Baking the Focaccia Wreath

  • Bake in the preheated oven for 25–30 minutes until golden brown and the cheese is melted.
  • Let it rest for a few moments before transferring to a serving board.

Serve and Enjoy

  • Tear a piece of focaccia, dip it into the melted cheese, and enjoy immediately.

Notes

Make sure your warm water is not too hot; knead the dough well, and don’t rush the rising times for the best results. Consider using whole wheat flour for healthier variations.
