Ingredients

Cheese Mixture

Tomato Preparation

  • 250 g cherry tomatoes (whole or halved) Provides freshness and color.
  • 1 tbsp olive oil For roasting tomatoes.
  • 1 tsp balsamic vinegar Adds delightful acidity.
  • 1 pinch salt To season the tomatoes.
  • 1 handful fresh basil (thinly sliced) Adds freshness at the end.

Serving

  • Toasted baguette slices or crostini Perfect for dipping.
  • 1 tbsp extra drizzle of olive oil (optional) For additional flavor.

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).

Roast the Tomatoes

  • In a mixing bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, and a pinch of salt.
  • Spread the tomatoes on a lined baking tray and roast in the oven for 15–20 minutes until soft and blistered.
  • Set aside to cool slightly.

Prepare the Cheese Mixture

  • In a separate bowl, combine cream cheese, ricotta, mozzarella, Parmesan, minced garlic, oregano, salt, and pepper.
  • Mix well until smooth and creamy.

Assemble and Bake

  • Spread the cheese mixture evenly in a small oven-safe dish.
  • Spoon the roasted tomatoes over the top.
  • Bake in the oven at 190°C (375°F) for 20 minutes or until bubbling and golden.

Garnish and Serve

  • Remove from the oven, top with freshly sliced basil and a drizzle of olive oil.
  • Serve hot with toasted baguette slices or crostini.

Notes

Using high-quality cheeses enhances the flavor. This dip is best served warm but can be reheated if cooled down. Customize with different herbs as desired.
