Instructions

Preparation

  • Heat 3/4 cup of olive oil in a small pan over medium heat until it shimmers.
  • Toss in the thyme sprigs and let them sizzle to release their aroma.
  • Stir in the roughly chopped almonds, cooking for 2-3 minutes until lightly golden.
  • Add the thinly sliced garlic cloves and Aleppo pepper, cooking for 1 minute, being careful not to burn the garlic.
  • Remove from heat and pour in the remaining 1/4 cup of olive oil.
  • Gently mix in the crumbled feta and chopped parsley using a fork, mashing them together slightly.
  • Spoon the mixture into a bowl and enjoy with fresh bread.

Notes

Use fresh ingredients for best results. Allow dip to sit for at least 15 minutes before serving to enhance flavors. You can freeze it for up to 2 months.
