For the nougat

  • 2 large egg whites Provides lightness and helps the Torrone set properly.
  • 1 cup toasted almonds Heart-healthy and flavorful, these add a delightful crunch.
  • 1 cup toasted pistachios or mixed nuts Offers a uniquely vibrant flavor and eye-catching color.
  • 1 teaspoon vanilla extract or citrus zest Adds a fragrant aroma, elevating the overall experience.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Spread your nuts on a baking sheet and toast them for 8–10 minutes until they are golden and fragrant.
  • In a saucepan, gently heat the honey over medium heat until it reaches 250°F (120°C).
  • In another pan, combine the sugar and water, bringing it to a boil until it reaches 300°F (150°C).
  • Beat the egg whites in a mixing bowl until they reach soft peaks.
  • Slowly pour in the hot honey into the egg whites while beating.
  • Gently add the sugar syrup to the egg and honey mixture while continuing to beat.
  • Fold in the toasted nuts and vanilla extract or citrus zest until fully integrated.
  • Spread the mixture into a parchment-lined dish, pressing it evenly.
  • Allow the Torrone to set at room temperature for about 4 hours.
  • Once set, remove it from the dish and cut it into squares or rectangles.

Notes

Use a candy thermometer for best results. Consider adding spices like cinnamon or nutmeg for flavor variety.
