Ingredients

Instructions

Preparation

  • Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  • To make the crust, combine chocolate cookie crumbs, sugar, and melted butter in a bowl. Mix well and press into the bottom of the prepared pan.

Filling

  • In a large bowl, beat softened cream cheese and sugar until smooth.
  • Melt the semisweet and milk chocolate chips and let cool slightly. Add to the cream cheese mixture and mix thoroughly.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Assembly

  • Pour the cheesecake mixture over the prepared crust.
  • Bake for 55-60 minutes until the center is almost set. Let it cool on a wire rack for 10 minutes before releasing from the springform pan.

Ganache and Finish

  • Heat heavy cream in a saucepan until simmering, then pour over dark chocolate chips. Stir until smooth to make ganache.
  • Pour ganache over the cooled cheesecake evenly.
  • Decorate with chocolate shavings and optional raspberries.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Avoid overbaking; the cheesecake should have a slight jiggle in the center. Consider adding espresso powder for more depth.
