  • In a medium saucepan, combine the mashed bananas, crushed pineapple (along with its juice), and lemon juice. Stir well to blend all ingredients evenly.

  • Place the saucepan over medium heat, bringing the mixture to a gentle boil, stirring frequently.
  • Continue cooking, stirring regularly, until the jam thickens and darkens slightly, about 20 to 25 minutes.
  • Test the jam by drawing a line through the mixture on the back of a spoon—if it holds, it’s ready.
  • Stir in the rum and allow it to simmer for another 5 minutes.
  • Remove from heat and let it cool slightly before pouring the jam into sterilized jars. Seal them tightly and refrigerate.
